Umbareo - Lost Recipe of Parsi Community


"Umbreo"or"Umbareo" itself a Parsi cuisine invented by local farmers. In the early 90's century, a group of around 30 Parsi family has come India through Western  Coastal Area. They started living near coastal areas situated in Gujarat and Maharashtra state. Their migration from Greater Iran to Gujarat has been created many struggle in their daily lifestyle. After that for surviving, they started harvesting their own vegetables etc. Along with that, they even do started hunting animals and with all those harvesting vegetables and animal, they used to survive. In Parsi cuisine there are lots of use of sea fish, dry fruits, animal like Mutton and Chicken flesh etc. 

They invented "Umbreo" or "Umbareo" as food for their surviving. Now a days it almost became a lost recipe. They use to make it using seasonal vegetables and animal by using few spices like cardamom, cinnamon, black pepper, coriander, cumin, clove and some other spices. they use to make this dish by marinating with , their natural raising agent, Taari or Taaru using spices. After that they take clay pot, and put inside a wild leaves to prevent vegetables and others stuffs to bring out, also it has good benefits also gave good taste into the dish. Then put marinated vegetables and animal flesh into the clay pot and lock it another clay bowl. Then put this clay pot upside down upon fire and by slow cooking it was been prepared. In this animal liver is also play good amount of role.That's how this lost recipe is made. 

Now there are very few families are who's last generation is making this to continue their community tradition. There are also many various dishes are famous in Parsi cuisine, they are equally carry their amazing community values. "Umbreo" was the food of their last meal of the day after so much hard work in field. They enjoy this food with their drink "Taaru"or "Taari".
